Understanding the term
The vulnerabilities fixed are disclosed when the update is released. In other words, failing to update means leaving open a door whose address has just been made public.
An update can break a website when a plugin is no longer compatible. That is why you back up first and, for a website that takes sales, test in a separate environment.
